Greek-Style Fish

Splashes of white wine and fresh squeezed lime...

Whispers of chopped herbs, slivers of finely cut onion and the essence of flattened minced garlic ....

An unmistakable fine drizzle of olive oil...

A sprinkle of sea salt and some favorite spices...

The flounder filet and a hot oven.

That is basically how I created a flounder entree tonight that tasted simply superb.

My objective was to create a lighter version of the wonderful Greek-style fish, like the popular dish served at restaurants like Captain Anderson's at Panama City Beach, Florida.
